Sauvignon – White Wine
The Sauvignon vine, along with the Chardonnay, is the most widespread and famous white grape variety in the world. It comes from the French region of Bordeaux and the name derives from the word sauvage (wild), an adjective that refers to its origins in south-western France. It is a very aromatic grape with a marked acidity that influences the climate of the place where it was grown and the degree of ripeness at the time of harvest. Our Sauvignon has an excellent acidity and a persistent scent in its being very structured.

Altitude: 35-50 meters a.s.l.
Annual production: 8-10 thousand bottles
Grapes: 100% Sauvignon
Form of breeding: Guyot
Vinification: Maceration: cold film, decantation: cold static, fermentation: for about 12 days in steel vats
Élevage: On noble lees for 6 months
Aging: In bottles for a further 2 months
Alcohol: 13.5 % vol.
Service temperature: 10°-12°C
Organoleptic examination: Golden yellow color, very fine bouquet reminiscent of sage, pepper, tomato leaf, this sauvignon is a wine of great structure but at the same time endowed with excellent acidity
Pairings: Elaborate first courses with a strong taste, spicy dishes, seafood and shellfish
